OPEN COCONUT UGALI SANDWICH:
I made this "out-of-the-box" ugali sandwich with a client who had requested for personalized cooking classes. She wanted a gluten free option for the buns. What better way than to have the ugali made in coconut milk and then have the buns finished off either in the oven or by deep frying? The beef was sweet and sour courtesy of fresh pineapples for the sweetness. No artificial sweeteners guys! On top is fresh creamy guacamole.
