2 cups cooked rice (best if it’s day-old rice)

2 eggs

1 carrot (small, finely chopped)

2 spring onions (chopped)

1 small onion (finely chopped)

2 garlic cloves (finely chopped)

2 tbsp soy sauce

2 tbsp oil (vegetable or sesame oil)

Salt – to taste

Pepper – to taste

(Optional: green peas, capsicum, chicken, or prawns)

🍳 How to Make

1. Preparation

Chop all the vegetables finely.

Separate the rice with a spoon so it’s fluffy (cold rice works best).


2. Cooking

1. Heat oil in a pan or wok.


2. SautΓ© garlic and onion until fragrant.


3. Add carrots (and peas if using) β†’ stir-fry for 2–3 minutes.


4. Crack in the eggs, scramble, and mix well.


5. Add the rice, stir-fry together with vegetables and egg.


6. Drizzle soy sauce, toss everything quickly.


7. Season with salt and pepper to taste.



3. Finishing

Add chopped spring onions.

Mix well and serve hot.

⭐ Tips

Use day-old rice for the best texture.

Don’t add too much salt (soy sauce is salty already).

If adding chicken or prawns, cook them separately first, then mix into the rice.
