MONDAY: Work lunch - one of my tips of eating for weight loss is simplicity. Simple ingredients, fresh produce, minimal work to prepare. You’re a busy mom, so am I. So I am of the thought of getting on with it, without fuss. I threw this Salmon and Green Bean Salad together as I ping pinged throughout the house this morning getting ready for work. It’s so dang good, and protein backed! The super fresh flavor and cooling salad ingredients are the perfect pick me up at work and just screen summer vibes. RECIPE BELOW👇🏼
3 oz fresh green beans
3 oz fresh tomatoes
1 can Alaskan salmon
2 Tbsp mayo
Salt and pepper to taste
🌶️make it spicy by adding a splash of sriracha!
I also had an full navel organs as “dessert.” I am full and happy, and fueled for the rest of the work day!
