Malu Kirata in My Style For 1 person (fine dining) Ingredients - White fish fillet โ 150g - Salt, pepper and curcumin powder - For Broth (เทเทเถฏเท) - Fish bones and head - Lemongrass โ 1 stick - Curry leaves - Onion, Garlic โ 1 / 2 cloves - Curry powder โ 1 tsp - Chili โ 1 tsp - Curcumin โ ยฝ tsp - Lime zest and juice - 1 cup coconut milk - Water โ 2 cups - Coconut oil โ 2 tbsp
Method - Separate fish fillets and bones and head. - Make the curry sauce using fish bones, head, herbs and spice and coconut milk, according to video. - Strain the curry broth and add karapincha oil to give a glossy/shine and nutrients values. - Pan sear the fish fillet for 3 min each side adding salt and peppers.
Plating โ Decorate the plate nicely with curry powder, curcuma and chili powder. Add a rice portion (80g) and place nicely a fish fillet.
Garnish โ Garnish with a salad made with cilantro, onion, naimiris, lemon zest and curry broth.
