For 1 person (fine dining)
Ingredients
- White fish fillet โ€“ 150g
- Salt, pepper and curcumin powder
- For Broth (เท„เทœเถฏเท’)
- Fish bones and head
- Lemongrass โ€“ 1 stick
- Curry leaves
- Onion, Garlic โ€“ 1 / 2 cloves
- Curry powder โ€“ 1 tsp
- Chili โ€“ 1 tsp
- Curcumin โ€“ ยฝ tsp
- Lime zest and juice
- 1 cup coconut milk
- Water โ€“ 2 cups
- Coconut oil โ€“ 2 tbsp

Method
- Separate fish fillets and bones and head.
- Make the curry sauce using fish bones, head, herbs and spice and coconut milk, according to video.
- Strain the curry broth and add karapincha oil to give a glossy/shine and nutrients values.
- Pan sear the fish fillet for 3 min each side adding salt and peppers.

Plating โ†’ Decorate the plate nicely with curry powder, curcuma and chili powder. Add a rice portion (80g) and place nicely a fish fillet.

Garnish โ†’ Garnish with a salad made with cilantro, onion, naimiris, lemon zest and curry broth.

Healthy Bread in Pan Cooked (Pizza Bread)
Ingredients / Method
- Make the dough by following instructions similar to a healthy pizza dough.


- Make equal-size dough balls, around 120 g each.
- Flatten them using a rolling pin.
- Pan-sear for 1 minute on each side.



Filling


- Sesame chili oil (refer to sesame chili oil video)


- Sliced cheese


- Pol sambol


- Egg (bullโ€™s eye)


- Perfect option for school snacks for kids or office lunch / breakfast.

Guilty Free Pizza
Pizza dough โ€“ 6 hour fermentation

Ingredients (Dough)
- Whole wheat flour โ€“ 1 kg
- Dry yeast โ€“ 14 g
- Water (cold) โ€“ 700 ml
- Salt โ€“ 20 g
- Olive oil โ€“ 25 ml
- Method (Dough)
- Make the pizza dough according to the video.
- Keep in a large bowl and allow fermentation for 6 hours.

2. Folding
- Fold the dough according to the video.
- Divide into 200 g balls and fold them again.

3. Base Preparation
- Preheat oven to 220ยฐC.
- Roll the dough into a round base on flour.
- Coat the surface with mixed seeds:
- Sunflower seeds
- Flax seeds
- Pumpkin seeds
- Sesame seeds
- Topping Ingredients
- Tomato sauce โ€“ 100 ml
- Mozzarella cheese (small pieces)
- Basil leaves

4. Baking โ€“ Stage 1
- Spread tomato sauce evenly.
- Bake for 10 minutes.

5. Baking โ€“ Stage 2
- Take the pizza out of the oven.
- Add mozzarella cheese and drizzle olive oil.
- Bake again for 5 minutes.

6. Garnish
- Take out the pizza.
- Garnish with fresh basil leaves.

7. Serving
- Serve nicely on a wooden plate.

Prawn and Avocado Pol Roti Sandwich

Ingredients
1. Pol Roti โ€“ Make the Pol Roti
- Flour โ€“ 200 g
- Carrot โ€“ 80 g
- Pol (grated coconut) โ€“ 100 g
- Flax seeds โ€“ 20 g
- Chopped curry leaves
- Salt
- Coconut water โ€“ 50 ml


2. Avocado Salsa
- Avocado โ€“ 1 (chopped)
- Handful of coriander leaves (chopped)
- 1 onion (chopped)
- Lime zest and lime juice
- Chilli (mixed)
- Salt and pepper
- Mix all ingredients together and get ready salsa.

3. Topping
- Greek yoghurt or mayonnaise


4. Prawn Sautรฉ
- Shell removed lagoon prawns โ€“ 10 pieces
- Pan sear with oil
- Add salt, pepper, chilli flakes
- Cook for 6 minutes

5. Dressing
- Chilli and sesame oil

Final Step
- When done with all ingredients, assemble the prawn and avocado sandwich according to the video.

Pol Roti Sandwiches
Ingredients
- Pol Roti
- Wheat flour โ€“ 200 g
- Coconut (grated) โ€“ 100 g
- Carrot (grated) โ€“ 1 (80 g)
- Flax seed โ€“ 20 g
- Curry leaves (thin sliced) โ€“ handful
- Coconut water โ€“ 50 ml
- Salt โ€“ to taste

Method (Pol Roti)
- Mix well and make the dough.
- Keep to rest for 15 minutes.
- Flatten using a rolling pin and cut equal round rotis.
- Burn/cook them on a medium flame using a non-stick pan.

Filling
- Chicken breast โ€“ flatten chicken breast, pan sear for 5 minutes on each side with salt and pepper.
- Tomato โ€“ cut thin round slices.
- Curry leaves paste โ€“ handful of curry leaves + 1 nai miris + cashew nuts 30 g + salt to taste + 10 ml coconut oil. Grind all ingredients using a grinder or stone grinder.
- Mozzarella cheese slice
- Curry leaves oil โ€“ a little (5 ml)
- Kithul treacle โ€“ a little (3 ml)

Plating
- Assemble the sandwich according to the video.
- Perfect for healthy and tasty dinner or lunch for anyone.

Spiced Caramel Banana Toast (for Kids)

Ingredients
- Whole grain sliced bread
- Yoghurt 1 cup
- Banana 2
- Dates 5 chopped
- Butter 10 g
- Cinnamon powder and cardamom powder 1 teaspoon

Garnish
- Crushed cashew nuts 50 g
- Kithul pani 2 tablespoons
- Lime zest
- Edible flowers

Method
- Toast the bread slices and spread yoghurt evenly on each slice.
- In a hot pan, sautรฉ the banana and dates with butter, cinnamon powder, and cardamom powder until soft and caramelised.
- Spoon the banana and date mixture over the yoghurt spread toast.
- Garnish with crushed cashews, lime zest, and kithul pani.
Serve warm.

Easy Sponge Cake

Ingredients
Eggs (room temperature) โ€“ 5
- Sugar โ€“ 100 g (grounded until a powder)
- Rice flour โ€“ 120 g
- Baking powder โ€“ ยฝ teaspoon (mix with rice flour)
- Salt โ€“ a pinch


Method
- Preheat oven to 175ยฐC and line the cake tray with baking paper.
- In a large bowl, beat eggs, adding powdered sugar and a pinch of salt for 6โ€“8 minutes, until the mixture triples in volume.
- Add rice flour to the mixture and gently fold using a spatula.
- Pour batter into the baking tray. Bake for 35โ€“45 minutes.
- Sponge cake is the foundation of many desserts.
Serve nicely, how you prefer.

Peanuts and Date Energy Truffles

Ingredients
- Peanuts โ€“ 200 g + 50 g (for sprinkle)
- Dates โ€“ 100 g
- Dark Chocolate โ€“ 200 g (for coating)


Process
- Grind peanuts and dates until a creamy texture is achieved.
- Make equal-sized balls and keep them in the freezer for 20 minutes.
- Melt dark chocolate in a microwave oven and dip the cold peanut balls into the melted chocolate.
- Crush 50 g of peanuts using a rolling pin.
- Sprinkle crushed peanuts over the chocolate-coated peanut balls.
- Serve nicely. Ideal for healthy snacks, pre-workout energy, and for kids.

Gym - Style Chicken Fried Rice (Healthy Version)
Ingredients (4 Portions)
- Chicken (boneless) โ€“ 600 g
- Basmati rice โ€“ 200 g
- Carrot (julienne cut) โ€“ 80 g
- Leeks (julienne cut) โ€“ 80 g
- Cabbage (julienne cut) โ€“ 50 g
- Ginger โ€“ 40 g
- Lemongrass โ€“ 1 stick
- Garlic โ€“ 4โ€“5 cloves
- Coconut oil โ€“ 30 ml + 10 ml
- Eggs โ€“ 4 (for solo egg omelette)
- Nai miris โ€“ 1
- Curry leaves โ€“ a little
- Salt and pepper โ€“ to taste

Process
- Cook basmati rice in hot water, adding salt and a drizzle of coconut oil.
- Chop ginger, lemongrass, garlic, and nai miris using a hammer or pestle.
- Hammer the sliced chicken breast and cut into small dice.
- Start roasting chopped ginger, garlic, lemongrass, nai miris, and curry leaves with coconut oil.
- Add diced chicken and roast until golden in colour.
- Add julienned vegetables and sautรฉ for 5 minutes.
- Add cooked and strained basmati rice, mix well, and cook for 3 minutes.
- Make solo egg omelettes by adding salt and pepper.
- Plate nicely with a portion of fried rice and omelette.

- Ingredients
Oats โ€“ 100 g
Almonds โ€“ 50 g
Cashews โ€“ 50 g

- Method:
Toast all ingredients together on a low flame.
