Eggless double-chocolate πͺ in a pan!π

Today we're doing this delish giaaaant cookie, healthified with ghee & jaggery (i promise you don't taste either of them!)

To make this we need:
π 1 tbsp ghee (substitute with the same qty of butter)
π¨ 1 tsp oil (to make 'em crispier!) (sub with the same qty of ghee/butter)
π 2 tbsp jaggery, crushed to a fine powder (sub with the same qty of powdered sugar)
π― 1/4 tsp vanilla extract (optional)
π 1 tbsp cocoa powder
πΎ 4 tbsp flour
π Pinch of salt
π Pinch of baking soda
π₯ 1-2 tbsp chocolate chunks/chips (optional)
Method:
π Whisk the ghee, oil & jaggery powder for 3-4 mins until lighter in color
π Tumble in the rest of the ingredients. We might need to get our hands in and add a few drops of water to form a stiff dough.
π Flatten the dough ball into a cookie. Top with chocolate chunks if desired.
π Take a pan (i used 6inch). Smear over some oil. Place over parchment/butter paper. Smear over some more oil.
π Place the cookie over the paper. Cover and cook at the slowest flame for 10-15 mins.
We know it's done when we see the cookie enlarged in size & tiny cracks on top.
π Let cool for a minimum of 30 mins & enjoyyyyyyyπ
