What is Chicken Sukka?
Chicken Sukka is a popular coastal Indian dish, especially famous in Mangalore and Maharashtra, where bold flavors meet rich textures. This dry chicken masala is prepared with slow-roasted spices, coconut, and a hint of tanginess—giving it that irresistible, street-style taste!
📌 Ingredients for Marination (500g Chicken)
✅ Salt (to taste)
✅ 1 tsp Turmeric Powder
✅ 5 tsp Red Chili Powder
✅ 1 tsp Kashmiri Chili Powder
✅ 1 tsp Chaat Masala
✅ 2 tsp Tandoori Chicken Masala
✅ 1 tsp Black Pepper Powder
✅ 1 tsp Tomato Ketchup
✅ 1 tsp Garam Masala
✅ 100g Curd/Yogurt
✅ Fresh Coriander or 1 tsp Coriander Paste
👉 Marinate the chicken for at least 30 minutes to let the flavors soak in!
📌 Cooking Process
🔥 Step 1: Prepare the Masala Base
1️⃣ Heat 1 tbsp oil in a pan.
2️⃣ Add whole spices:
• 3-4 Black Peppercorns
• 3-4 Cloves
• 1-2 Black Cardamom
• 1 tsp Jeera (Cumin Seeds)
• 1 Star Anise
• ½ Javitri (Mace)
3️⃣ Add 3 finely chopped onions and sauté till golden brown.
4️⃣ Add 1 tbsp Ginger-Garlic Paste and cook till raw smell disappears.
5️⃣ Toss in fresh Curry Leaves and let the aroma build up!
6️⃣ Stir in 1-2 chopped tomatoes and cook till soft.
7️⃣ Add 3-4 tsp freshly grated coconut (or dry coconut).
8️⃣ Cook till oil separates from the masala.
🔥 Step 2: Cook the Chicken
9️⃣ Add the marinated chicken and cook on high flame for 5-6 minutes while stirring.
🔟 Lower the heat, cover, and let it cook for 7-8 minutes.
