Today we're making our delicious homemade tomato soup. It will absolutely blow your mind! So easy, less than 30 minutes and soooo delicious!
2 yellow onions finely chopped
Fresh basil chopped
5 cloves of garlic minced
4 tbsp of grass fed butter
56oz of organic crushed tomatoes (2 large 28oz cans)
1 tbsp of raw organic honey
1 cup of heavy whipping cream
1 ½ cup Parmesan cheese
2 cups of kettle and fire beef broth
Place a medium pot over medium heat
Add the Butter and your chopped onions.
saute the onions for about 11 to 13 minutes stirring occasionally and cook until they are soft and golden.
Next add your tablespoon of minced garlic and continue stirring for another minute until the garlic is fragrant.
Next add two 28 Oz cans of organic crushed tomatoes.
Next add:
2 cups of beef broth.
¼ cup of your chopped fresh basil
1 tbsp of organic raw honey
1 tsp of black pepper
stir that all together bring it to a boil then reduce the heat to a simmer partially covered and simmer for 10 minutes
Now if you like a little more texture in your soup you can leave it as is without blending or if you like a creamy tomato soup you can use either an immersion blender or blend it in batches using a high-powered blender.
Once it has reached your desired creaminess add 1 cup of heavy whipping cream and 1 ½ cup of freshly grated Parmesan cheese.
Stir that for the cheese to incorporate then bring it back to a simmer and season with a tbsp of garlic and onion powder.
