Ingredients List
Onions: 1 bowl, sliced
Tomatoes: 4, chopped
Green Chillies: 3, slit
Fresh Herbs: Coriander and curry leaves
Ginger-Garlic Paste: 1 tbsp
Spices & Pantry
Salt: 2 tsp as per your taste
Red Chilli Powder: 4 tsp as per your taste
Garam Masala (or Chicken Masala): 1 tbsp
Coriander Powder: 1 tbsp
Turmeric: A pinch
Curd (Yogurt): 1 big tbsp

Cooking Steps
1. Marinate the Chicken
In a large bowl with the raw chicken pieces, add the following:
A handful of the sliced onions.
1 big tbsp of curd.
The slit green chillies.
The entire masala mixture (salt, chilli powder, turmeric, garam masala, and coriander powder).
The chopped tomatoes.
Mix thoroughly and let it sit for 15 minutes.
2. Prepare the Fried Onions
Heat oil in a pan over medium heat.
Fry the remaining sliced onions, stirring continuously, until they turn golden brown and crispy. Remove them from the pan and set aside.
3. Sauté Aromatics
In the same oil, add 1 tbsp of ginger-garlic paste.
Roast until it becomes fragrant.
4. Cook the Chicken
Add the marinated chicken to the pan.
Cook on a low flame for 10 minutes.
Close the lid and continue to cook for a few more minutes.
5. Final Touch & Garnish
Add the fried onions back into the pan.
Mix well and continue cooking until the oil separates from the masala (a sign that it is perfectly cooked).
Garnish with fresh coriander leaves.
