I'm going to show you a typical recipe from my region, Huila-style cookies, a delicious and easy-to-prepare recipe, from Huila to the world.
Ingredients:
-Panela or piloncillo (500 g)
-Water (700 ml)
-Wheat flour (500 g)
-Grated nutmeg (15 g)
-Ground cinnamon (15 g)
-Cloves (10)
-Orange peel (2 pieces)
-Unsalted butter (40 g)
-Baking powder (15 g)
-Baking soda (15 g)
-Vanilla extract (10 ml)
Preparation:
Begin by adding the panela, water, orange peel, nutmeg, ground cinnamon, and cloves to a pot and cooking until the piloncillo dissolves.
Once it's ready, strain it to remove the cloves and orange peel, then add the butter and mix until combined.
In a separate bowl, sift together the flour, baking powder, and baking soda. Add the dissolved panela (unrefined cane sugar) and a touch of vanilla extract, and mix with a hand mixer and electric mixer until everything is well combined.
Pour the batter into a greased and floured pan and bake for 45 minutes at 180 degrees Celsius (350 degrees Fahrenheit). Remove from the oven, let it cool completely, unmold, and you'll see how delicious this cake is!
