Coffee Crème Caramel
Ingredients:
1. Custard powder: 2½ tbsp
2. Sugar: ¼ cup
3. Milk: 1 cup + 2 tbsps
4. Coffee: 1 tbsp
5. For caramelizing sugar:
Sugar: ¼ cup
Water: 1 tsp
Instructions:
1. Caramelize the sugar over low-medium heat, ensuring it doesn't burn, as it can give your pudding a bitter taste.
2. Pour the caramelized sugar into a dry bowl and set it aside.
3. In the same pan, combine the remaining ingredients (custard powder, sugar, milk, and coffee) and mix well.
4. Place the pan over low heat and stir continuously.
5. Increase the heat to medium, still stirring constantly, until the mixture thickens.
6. Once thickened, turn off the heat and quickly pour the mixture over the caramelized sugar in the bowl.
7. Allow it to cool to room temperature.
8. Refrigerate for 4-5 hours or overnight.
9. Serve chilled.
