• 1 cup Sooji (Semolina)
• ¼ cup Rice Flour (for extra crispiness - optional)
• ¼ cup Curd (Yogurt)
• 1.5 cup Water (adjust as needed)
• 1.5 tsp small Salt (as per taste)
✅ For the Flavors:
• 1-inch Ginger (grated)
• 2-3 Green Chili (finely chopped, adjust as per spice preference)
•1 Onion (finely chopped)
•1 Tomato (finely chopped)
•1 tbsp Coriander Leaves (chopped, optional)
✅ For Cooking:
• 2-3 tbsp Oil/Ghee (for shallow frying)
🔥 Steps to Make Sooji Chilla:
1️⃣ Prepare the Batter:
• In a bowl, mix sooji, rice flour, curd, and salt.
• Add water gradually and whisk well until smooth.
• Let the batter rest for 10-15 minutes so the sooji absorbs moisture and softens.
2️⃣ Add the Flavors:
• Add grated ginger, chopped green chilies, onion, tomato, black pepper, and coriander leaves to the batter.
• Mix well; if the batter thickens, add a little more water to maintain a pancake-like consistency.
3️⃣ Cook the Chilla:
• Heat a tawa (griddle) and grease it lightly with oil or ghee.
• Pour a ladleful of batter onto the tawa and spread it gently to form a medium-thick chilla. Cover and the chilla on medium flame for 2-3 mins. Uncover then again let it stay on tawa for next 3-4 minutes untill crispy and light brown
• Drizzle a little oil around the edges.

• Flip it carefully and cook the other side for another 2 minutes until fully done
