β₯οΈπ° St. Valentine's red beetroot pie π« π
Pie crust:
80g flour
70g ground almonds
115 g cold butter
pinch of salt
60g cold water
~ mix, fill a pie tin with the dough, prebake for 15 mins
The filling:
350 g fresh beetroot, blended
3 eggs
100g sugar
250 g mascarpone
1/2 tsp nutmeg
1/2 tsp cinnamon
~ add to the pie tin on top of the prebaked dough, bake for around 40 mins at 180 degrees Celsius
~ I had extra mascarpone that I mixed with a dollop of heavy cream and piped on top of the pie before baking
