Makes: 18-20 balls

Ingredients:
600g white potatoes
2 TBSP corn starch
1 tsp salt
1 TBSP Aonori (seaweed flakes)
Mozzarella Cheese, cut into small cubes
2 cups Panko breadcrumbs, for coating
Oil for deep frying
Sauce:
2 TBSP Japanese mayonnaise
1 TBSP Tomato sauce
1 TBSP Sriracha (or to taste)
¼ tsp soy sauce
Method:
1. Peel and cut potatoes into large chunks. Place in a pot of boiling water and cook until tender (about 10 minutes).
2. In a small bowl, mix Japanese mayonnaise, tomato sauce, sriracha and soy sauce. Set aside.
3. Drain the cooked potatoes well, then mash until smooth. Add corn starch, salt and Aonori flakes. Mix until evenly combined.
4. With damp hands, scoop a small portion of the potato mixture and flatten it in your palm. Place a mozzarella cube in the center, then wrap the potato around it, shaping into a smooth ball. Roll lightly in panko to coat. Repeat with the remaining mixture.
5. Heat oil in a wok or deep pan to 170 - 180°C. Fry the potato balls in batches for 2-3 minutes, or until golden and crispy.
6. Transfer to a wire rack or paper towels to drain excess oil. Serve hot with the dipping sauce.
