A simple yet super nutritious Indian-style stir fry made with red amaranth leaves, potatoes, and tomatoes — rich in iron, fiber, and antioxidants!
🌿 Lal Amaranth Aloo Tamatar Sabzi
Method:
1. Heat oil in a pan. Add cumin seeds and let them splutter.
2. Add a pinch of hing, then garlic and ginger. Sauté till light golden-brown.
3. Add onion and cook till translucent.
4. Add diced potatoes, salt, turmeric powder, and mix well. Cover and cook for 3–4 minutes.
5. Now add chopped tomatoes, stir, and cook until they soften and oil separates.
6. Add coriander powder and red chilli powder. Mix everything well.
7. Add chopped red amaranth leaves. Toss gently.
8. Sprinkle little water, cover, and cook on low flame until potatoes and amaranth are fully cooked.
9. Turn off the heat. Serve hot with roti or dal–rice.
