Cut the peanut pumpkin, with the skin, into bite-sized pieces and slice 1 red onion. 2. Place the trimmed peanut squash, red onion, cherry tomatoes, and whole garlic cloves in a heat-resistant bowl. 3. Drizzle with extra-virgin olive oil, sprinkle with a pinch of salt, and mix. 4.
