3-4 tablespoons vegetable oil
1 medium potato, thinly sliced (for the tahdig)
Instructions:
1-Prepare the Pasta:
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain the pasta, rinse with cold water, and set aside.
2-Make the Sauce:
In a large pan, heat 2 tablespoons of oil over medium heat. Add the chopped onion and sauté until golden brown. Stir in the turmeric, salt, pepper and tomato paste.
Add the sliced mushrooms and sauté until they release their moisture and start to brown.
Cook for 10-15 minutes until the sauce thickens.

In a large non-stick pot, heat 2 tablespoons of oil over medium heat. Arrange the potato slices on the bottom of the pot to create the crispy tahdig.
Layer half of the cooked pasta over the potatoes.
Add half of the mushroom sauce, spreading it evenly.
Repeat with the remaining pasta and sauce, layering like a lasagna.
Drizzle a bit of oil over the top.

Cook on medium-high heat for 5-7 minutes until you hear a sizzle, then reduce to low heat and steam for 30-40 minutes.
